I sometimes add a bit of chicken when I make this at home. Be sure to use good quality curry powder and feel free to up the curry factor beyond 1 tsp if you’re a big fan of the stuff.

Ingredients:

1/4 cup powdered milk

1/2 tsp salt

1 tsp of your favorite curry powder

3 1/2 cups water

2 cup instant rice

1/4 cup cashew halves or pieces

2 Tbs dried apricots, chopped

2 oz grated cheddar cheese

How to prepare:
Mix dry milk and enough water to form a paste. Add remaining water, mix well and bring to a boil. Stir in rice. Cover and simmer for 10 minutes. Add apricots. Continue to simmer until water is absorbed and rice is soft (about 10 more minutes). Stir in nuts and cheese. Serve when the cheese is melted.
